Make quick and satisfying buffalo chicken bowls using shredded chicken, a creamy buffalo sauce, and your choice of base and fresh vegetables.

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 4 cups cooked brown rice or quinoa
  • 1 cup chopped celery
  • 1 cup chopped romaine lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup blue cheese dressing or ranch dressing
  • 2 tablespoons chopped fresh chives for garnish

Instructions

  1. In a medium saucepan over medium heat, combine the buffalo sauce, Greek yogurt, melted butter, garlic powder, and salt. Whisk until smooth and heated through, about 3 minutes.
  2. Add the shredded chicken to the sauce and stir until the chicken is fully coated and hot.
  3. Divide the cooked rice or quinoa among four bowls.
  4. Top the base in each bowl with equal portions of the sauced buffalo chicken.
  5. Arrange the chopped celery, romaine lettuce, and shredded carrots around the chicken.
  6. Drizzle each bowl with blue cheese or ranch dressing.
  7. Garnish with fresh chives before serving.

  • For meal prep, store the cooked chicken, base, and vegetables separately. Assemble just before eating.
