Enjoy a creamy, tomato-based Indian curry with tender chicken, perfect for a restaurant-style meal at home. This mild and flavorful Butter Chicken is best served with warm naan bread.

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup plain yogurt
  • 1 teaspoon sugar
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a bowl, combine chicken pieces with ginger-garlic paste, garam masala, cumin, coriander, turmeric, cayenne pepper (if using), and salt. Mix well and let it marinate for at least 30 minutes.
  2. Melt butter in a large skillet or Dutch oven over medium heat. Add chopped onion and cook until softened and lightly browned, about 8-10 minutes.
  3. Add minced garlic and grated ginger to the skillet and cook for 1 minute more until fragrant.
  4. Stir in the crushed tomatoes, sugar, and salt. Bring the mixture to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally.
  5. Add the marinated chicken to the tomato sauce. Bring back to a simmer, then cover and cook for 15-20 minutes, or until the chicken is cooked through and tender.
  6. Stir in the heavy cream and yogurt. Cook for another 5 minutes, stirring gently, until the sauce is heated through and creamy. Do not boil.
  7. Taste and adjust seasoning if needed.
  8. Garnish with fresh cilantro before serving.

Notes

  • For a spicier dish, increase the amount of cayenne pepper.
  • If you don’t have fresh ginger, you can use 1 teaspoon of ground ginger.
  • Serve with warm naan or basmati rice for a complete meal.
