Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional, for a deeper flavor)
2 1/4 cups all-purpose flour
1/4 teaspoon salt
Instructions
Cream the softened butter, granulated sugar, and powdered sugar together in a large bowl until light and fluffy.
Beat in the vanilla extract and almond extract, if using.
In a separate bowl, whisk together the flour and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Shape the dough into a log, wrap it tightly in plastic wrap, and chill in the refrigerator for at least 1 hour.
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Slice the chilled dough into 1/4-inch thick rounds. Place them on the prepared baking sheets, about 1 inch apart.
Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers should still look pale.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For Danish style, use a cookie press to shape the dough immediately after mixing.
Chef Tariq suggests chilling the dough for 2 hours for cleaner slices and richer flavor.
For a crispier cookie, bake for an additional 1 to 2 minutes.
Dust cooled cookies lightly with powdered sugar before serving, as Amara often does.
