Garlic Parmesan Roasted Cabbage Wedges

Make tender, flavorful roasted cabbage wedges coated in garlic and Parmesan cheese. This simple cabbage recipe cooks quickly and makes an excellent low-carb side dish.

Ingredients

  • 1 medium head green cabbage
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Remove any loose outer leaves from the cabbage. Cut the cabbage head into 4 equal wedges, keeping the core intact in each wedge to hold it together.
  3. In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
  4. Brush the oil mixture evenly over all sides of the cabbage wedges.
  5. Place the wedges cut-side down on the prepared baking sheet.
  6. Roast for 20 minutes.
  7. Remove the sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the top of each wedge.
  8. Return to the oven and roast for another 5 to 10 minutes, or until the cabbage is tender and the cheese is melted and lightly browned.
  9. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the oil mixture before brushing.
  • If your wedges are very thick, you may need an extra 5 minutes of roasting time.
  • You can substitute nutritional yeast for Parmesan cheese to make this recipe vegan.
