  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the chicken wings completely dry with paper towels. This is key for crispy skin.
  3. In a large bowl, toss the chicken wings with olive oil, salt, and black pepper until evenly coated.
  4. Arrange the wings in a single layer on the prepared baking sheet.
  5. Bake for 40-50 minutes, flipping the wings halfway through, until they are golden brown and crispy.
  6. While the wings are baking, prepare the Cacio e Pepe sauce. In a small saucepan over medium heat, melt the butter.
  7. Add the minced garlic and red pepper flakes (if using) and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  8. Remove the saucepan from the heat and stir in the grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
  9. Once the wings are cooked and crispy, transfer them to a large bowl.
  10. Pour the Cacio e Pepe sauce over the hot wings and toss gently to coat them evenly.
  11. Garnish with fresh chopped parsley before serving.
