1 pound large shrimp, peeled and deveined
12 ounces smoked andouille sausage, sliced into 1/2-inch rounds
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 large yellow onion, cut into wedges
3 tablespoons olive oil
2 tablespoons Cajun seasoning blend
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1 lemon, cut into wedges (for serving)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the sliced sausage, bell peppers, and onion wedges.
Drizzle the vegetables and sausage with 2 tablespoons of the olive oil. Toss to coat evenly.
Spread the sausage and vegetable mixture onto the prepared sheet pan in a single layer.
Roast for 10 minutes.
While the sausage and vegetables roast, place the peeled shrimp in the same bowl used earlier. Add the remaining 1 tablespoon of olive oil, Cajun seasoning, garlic powder, and black pepper. Toss the shrimp until fully coated.
Remove the sheet pan from the oven. Push the sausage and vegetables to one side of the pan.
Arrange the seasoned shrimp on the empty side of the sheet pan in a single layer.
Return the sheet pan to the oven and bake for another 8 to 10 minutes, or until the shrimp are pink and cooked through and the vegetables are tender.
Serve immediately with fresh lemon wedges squeezed over the top.
Notes
Use a good quality, store-bought Cajun seasoning blend for best results.
Do not overcrowd the sheet pan; use two pans if necessary to allow everything to roast instead of steam.
Shrimp cooks quickly; add it later in the cooking process to prevent it from becoming tough.
