2 slices of your favorite bread (ciabatta or sourdough work well)
1 tablespoon olive oil
1 ball fresh mozzarella, sliced
2-3 slices ripe tomato
4-5 fresh basil leaves
1 tablespoon balsamic glaze (store-bought or homemade)
Instructions
Brush the outside of both bread slices with olive oil.
Layer the mozzarella, tomato slices, and basil leaves on the inside of one slice of bread.
Drizzle the balsamic glaze over the fillings.
Top with the other slice of bread, olive oil side up.
Heat a panini press or a skillet over medium heat.
Grill the panini for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
Slice in half and serve immediately.
Notes
For a homemade balsamic glaze, simmer balsamic vinegar in a small saucepan until it reduces and thickens.
Add a sprinkle of salt and pepper to the tomatoes before grilling for extra flavor.
If you don’t have a panini press, you can use a skillet and a heavy object (like another pot or a foil-wrapped brick) to press the sandwich.
