  • 1/2 cup popcorn kernels
  • 1/4 cup coconut oil or vegetable oil
  • 1/2 cup packed brown sugar
  • 1/4 cup light corn syrup
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon flaky sea salt, plus more for sprinkling

Instructions

  1. Pop the kernels using the oil in a large pot over medium-high heat. Stop when popping slows to several seconds between pops. Set popcorn aside.
  2. In a medium saucepan, combine the brown sugar, corn syrup, and butter. Heat over medium heat, stirring until the butter melts and the sugar dissolves.
  3. Bring the mixture to a boil. Cook without stirring for exactly 5 minutes. This creates the caramel.
  4. Remove the saucepan from the heat. Quickly stir in the vanilla extract and baking soda. The mixture will foam up.
  5. Pour the hot caramel mixture evenly over the popped corn in a large bowl.
  6. Add the 1/2 teaspoon of sea salt. Toss quickly and gently until the popcorn is evenly coated.
  7. Spread the coated popcorn onto a baking sheet lined with parchment paper.
  8. Bake at 250°F (120°C) for 15 minutes, stirring halfway through. This sets the caramel.
  9. Remove from the oven. Sprinkle with extra flaky sea salt while still warm.
  10. Let the popcorn cool completely before breaking apart and serving.
