1 cup chopped yellow onion
2 cloves garlic, minced
1 cup chopped bell pepper (any color)
1 cup frozen peas and carrots
1 teaspoon grated fresh ginger
4 cups riced cauliflower
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon rice vinegar
Salt and pepper to taste
Optional: chopped green onions for garnish
Instructions
Heat olive oil in a large skillet or wok over medium-high heat.
Add chopped onion and bell pepper. Cook until softened, about 5 minutes.
Add minced garlic and grated ginger. Cook for 1 minute until fragrant.
Stir in frozen peas and carrots. Cook for another 2-3 minutes.
Add the riced cauliflower to the skillet. Stir well to combine with the vegetables.
Cook, stirring occasionally, until the cauliflower is tender-crisp, about 5-7 minutes.
In a small bowl, whisk together soy sauce, sesame oil, and rice vinegar.
Pour the sauce over the cauliflower mixture and toss to coat evenly.
Cook for an additional 1-2 minutes, allowing the sauce to heat through.
Season with salt and pepper to taste.
Garnish with chopped green onions if desired. Serve hot.
Notes
You can buy pre-riced cauliflower to save time.
Feel free to add other vegetables like broccoli florets or chopped mushrooms.
For a spicier kick, add a pinch of red pepper flakes.
