  • 1 medium head cauliflower, about 2 lbs
  • 1 large egg, lightly beaten
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and thoroughly dry the cauliflower. Cut it into florets.
  3. Process the cauliflower florets in a food processor until they resemble coarse rice.
  4. Microwave the cauliflower rice in a microwave-safe bowl for 4-5 minutes, or until tender. Alternatively, steam it for 5-7 minutes.
  5. Let the cooked cauliflower cool slightly. Transfer it to a clean kitchen towel or cheesecloth.
  6. Squeeze out as much moisture as possible from the cauliflower. This is a crucial step to avoid a soggy crust.
  7. In a bowl, combine the dried cauliflower with the beaten egg, mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
  8. Spread the mixture evenly onto the prepared baking sheet, forming a pizza crust shape about 1/4 inch thick.
  9. Bake for 20-25 minutes, or until the crust is golden brown and firm to the touch.
  10. Remove from the oven, add your favorite toppings, and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
