  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the riced cauliflower to the skillet.
