1 head broccoli, cut into small florets
1 head cauliflower, cut into small florets
2 tablespoons butter
2 tablespoons all-purpose flour
1.5 cups milk
1 cup shredded sharp cheddar cheese
1/2 cup shredded Gruyère cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup breadcrumbs (optional, for topping)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
Blanch the broccoli and cauliflower florets in boiling water for 3 minutes. Drain well and set aside.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
Gradually whisk in the milk until the mixture is smooth. Cook, stirring often, until the sauce thickens enough to coat the back of a spoon.
Remove the saucepan from the heat. Stir in the cheddar cheese and Gruyère cheese until completely melted and smooth. Season with salt and pepper.
Fold the blanched broccoli and cauliflower into the cheese sauce until everything is evenly coated.
Pour the mixture into the prepared baking dish.
If using, sprinkle the breadcrumbs evenly over the top.
Bake for 20 to 25 minutes, or until the top is golden brown and the sauce is bubbly.

Notes
For extra flavor, add a pinch of nutmeg to the cheese sauce.
