1 cup vegetable broth
1/2 cup milk (dairy or non-dairy)
1/2 cup shredded sharp cheddar cheese

Instructions
Steam or boil the cauliflower florets until they are very tender, about 10-15 minutes.
Drain the cooked cauliflower well. You want it as dry as possible.
Place the cooked cauliflower, vegetable broth, and milk into a food processor or high-powered blender.
Blend until the mixture is completely smooth and resembles the texture of creamy grits. Scrape down the sides as needed.
