A budget-friendly and hearty cheesy ground beef casserole that’s a crowd-pleasing family favorite, reminiscent of homemade “Hamburger Helper.”

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10.5 ounce) can condensed tomato soup
  • 1 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces uncooked elbow macaroni
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet or Dutch oven, brown the ground beef and onion over medium heat. Drain off any excess fat.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the diced tomatoes, condensed tomato soup, water, chili powder, salt, and pepper. Bring the mixture to a simmer.
  4. Add the uncooked elbow macaroni to the skillet. Cover and cook for 15-20 minutes, or until the macaroni is tender, stirring occasionally.
  5. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  6. Serve hot and enjoy!

Notes

  • For an extra kick, add a pinch of cayenne pepper.
  • You can substitute other pasta shapes like rotini or penne.
