One-Pan Cheesy Taco Potatoes

Make this easy, cheesy, taco-seasoned potato skillet for a quick weeknight dinner.

Ingredients

  • 2 lbs russet potatoes, diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped green onion, for garnish

Instructions

  1. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  2. Add the diced potatoes to the skillet and cook, stirring occasionally, until they start to brown and soften, about 10 minutes.
  3. Push the potatoes to one side of the skillet. Add the ground beef to the empty side and cook until browned, breaking it up with a spoon. Drain any excess fat.
  4. Stir the taco seasoning mix and water into the ground beef mixture. Bring to a simmer and cook for 2 minutes until the sauce thickens slightly.
  5. Stir the seasoned beef mixture together with the potatoes.
  6. Sprinkle both the cheddar and Monterey Jack cheeses evenly over the top of the potato and beef mixture.
  7. Place the skillet under a preheated broiler for 2-3 minutes, watching closely, until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with green onions, and serve immediately.

Notes

  • If you do not have an oven-safe skillet, transfer the mixture to a baking dish before adding the cheese and broiling.
  • Serve with sour cream, salsa, or sliced jalapeƱos for extra flavor.
  • Use pre-cooked diced potatoes to reduce the cooking time for the potatoes by about 5 minutes.
