Make simple, buttery shortbread cherry crumble bars with a sweet and tart fruit filling. This recipe yields perfectly crumbly squares.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into pieces
  • 1 1/2 cups cherry pie filling (or 1 1/2 cups pitted fresh or frozen cherries mixed with 1/4 cup sugar and 1 tablespoon cornstarch)
  • 1/4 cup packed light brown sugar

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the flour, oats, granulated sugar, and salt for the crust.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of this crumb mixture evenly into the bottom of the prepared pan to form the crust.
  5. Spread the cherry pie filling evenly over the crust layer.
  6. In a small bowl, mix the remaining one-third of the crumb mixture with the brown sugar. Sprinkle this mixture evenly over the cherry filling to create the crumble topping.
  7. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the bars cool completely in the pan on a wire rack, about 2 hours, before lifting them out using the parchment paper overhang.
  9. Cut into squares and serve.

Notes

  • For a nut variation, add 1/2 cup chopped pecans or walnuts to the crumble topping mixture.
  • If using fresh or frozen cherries, ensure they are well-drained before mixing with sugar and cornstarch to prevent a watery filling.
  • Cooling completely is necessary for clean cuts; do not rush this step.
