  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • 1/2 cup mango, diced
  • 1/2 cup pineapple, diced
  • 1/4 cup kiwi, sliced
  • 2 tablespoons shredded coconut, toasted (for topping)

Instructions

  1. Combine the chia seeds, milk, sweetener, vanilla extract, and salt in a jar or container.
  2. Stir well for one minute to prevent clumping.
  3. Refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens into a pudding consistency.
  4. Before serving, stir the pudding again. If it is too thick, add a splash more milk.
