A creamy and comforting chicken and broccoli casserole, perfect for a family weeknight meal. This easy bake combines tender chicken, vibrant broccoli, and your favorite rice or pasta in a rich, cheesy sauce.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked white rice or small pasta
  • 1 head of broccoli, cut into florets
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Breadcrumbs for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using rice, cook it according to package directions. If using pasta, cook it until al dente.
  3. In a large bowl, combine the cooked chicken, cooked rice or pasta, and broccoli florets.
  4. In a separate bowl, whisk together the cream of chicken soup, milk, shredded cheddar cheese, salt, and pepper until smooth.
  5. Pour the sauce mixture over the chicken, rice or pasta, and broccoli. Stir gently to coat everything evenly.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. If desired, sprinkle breadcrumbs over the top for a crispy crust.
  8. Bake for 25-30 minutes, or until the casserole is bubbly and heated through, and the topping is golden brown.
  9. Let it rest for a few minutes before serving.

Notes

  • You can use leftover cooked chicken for this recipe.
  • Feel free to add other vegetables like carrots or peas.
  • For a richer flavor, you can use cream of mushroom soup instead of cream of chicken soup.
  • Adjust cheese amount to your preference.
