  • 2 cups cooked, shredded chicken breast (use rotisserie chicken for speed)
  • 2 cups fresh or frozen broccoli florets, lightly steamed or blanched
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup crushed butter crackers (like Ritz) for topping (optional)
  • 2 tablespoons melted butter (if using cracker topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked rice, cooked chicken, and blanched broccoli florets.
  3. In a separate medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, milk, onion powder, garlic powder, pepper, and salt until smooth. This creates your creamy base.
  4. Pour the creamy sauce mixture over the chicken, rice, and broccoli mixture. Stir gently until everything is evenly coated.
  5. Stir in 1 1/2 cups of the shredded cheddar cheese into the casserole mixture.
  6. Spread the mixture evenly into the prepared baking dish.
  7. In a small bowl, mix the remaining 1/2 cup of cheddar cheese with the crushed butter crackers and melted butter, if you are using the topping. Sprinkle this mixture evenly over the top of the casserole.
