  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 8 ounces dried egg noodles
  • 2 tablespoons vegetable oil, divided
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1/2 cup sliced celery
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the egg noodles according to package directions until tender but still firm. Drain them well and toss with a tiny bit of oil to prevent sticking. Set aside.
  2. In a small bowl, whisk together the low sodium soy sauce, oyster sauce, dark soy sauce, rice vinegar, sesame oil, ground ginger, and white pepper. This is your savory chow mein sauce. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the wok and set it aside.
  4. Add the remaining 1 tablespoon of oil to the wok. Add the sliced onion and cook for 1 minute until slightly soft.
  5. Add the minced garlic, cabbage, carrots, mushrooms, and celery to the wok. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  6. Return the cooked chicken to the wok. Add the cooked noodles.
  7. Pour the prepared chow mein sauce over the noodles and vegetables. Toss everything together quickly to coat evenly.
  8. Pour the cornstarch slurry into the wok while stirring constantly. Cook for 1 minute until the sauce thickens slightly and coats the noodles well.
  9. Remove from heat. Garnish with sliced green onions before serving immediately.

  • For the best texture, make sure your wok or skillet is very hot before you begin stir-frying the vegetables. This helps them stay crisp.
