You can make restaurant-style chicken fried rice that tastes better than takeout right in your own kitchen. This quick, one-pan recipe uses day-old rice for the perfect texture and delivers savory, authentic Chinese flavors fast.

  • 3 cups cold, day-old cooked rice
  • 1 tablespoon vegetable oil, divided
  • 8 ounces boneless, skinless chicken breast, cut into small pieces
  • 2 large eggs, lightly beaten
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon white pepper
  • 2 green onions, sliced, for garnish

Instructions

  1. Prepare your ingredients: Make sure your rice is cold and broken up. Dice the chicken and chop the green onions.
  2. Cook the chicken: Heat 1 teaspoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until it is browned and cooked through, about 4 to 5 minutes. Remove the chicken from the skillet and set it aside.
  3. Scramble the eggs: Add the remaining 2 teaspoons of oil to the skillet. Pour in the beaten eggs and quickly scramble them until just set. Remove the eggs and set them aside with the chicken.
  4. Sauté aromatics and vegetables: Add the remaining 2 teaspoons of oil to the hot skillet. Add the minced garlic and grated ginger. Cook for 30 seconds until fragrant. Add the frozen mixed vegetables and cook for 2 minutes until they are heated through.
  5. Fry the rice: Push the vegetables to one side of the skillet. Add the cold rice to the empty side. Spread the rice out and let it cook undisturbed for 1 to 2 minutes to get slightly crispy.
  6. Combine and season: Stir the rice, vegetables, cooked chicken, and scrambled eggs together. Pour the soy sauce, oyster sauce, sesame oil, and white pepper over the mixture. Toss everything quickly and continuously for 2 to 3 minutes until the rice is evenly coated and heated through.
  7. Serve immediately: Taste and adjust seasoning if needed. Garnish with sliced green onions before serving your flavorful fried rice bowl.

Notes

  • Use day-old, cold rice. This is the most important step for achieving fluffy, non-mushy fried rice. Freshly cooked rice contains too much moisture.
  • Use high heat when stir-frying the rice to get those desirable crispy edges, mimicking restaurant style.
  • For a deeper color, add a dash of dark soy sauce with the regular soy sauce.
