1 tablespoon vegetable oil
1 pound ground chicken
1/2 cup finely chopped water chestnuts
1/2 cup finely chopped mushrooms (white or cremini)
1/4 cup minced fresh ginger
2 cloves garlic, minced
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1/4 teaspoon black pepper
1 head butter lettuce or iceberg lettuce, leaves separated and washed
2 tablespoons chopped green onions, for garnish
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is browned and fully cooked, about 5 to 7 minutes. Drain off any excess fat.
Add the water chestnuts, mushrooms, ginger, and garlic to the skillet. Cook for 2 minutes until fragrant.
In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, and black pepper.
Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
Remove the skillet from the heat.
Spoon the chicken mixture into the center of the prepared lettuce cups.
Garnish with chopped green onions before serving immediately.
Notes
For extra crunch, you can add 1/4 cup of finely diced carrots along with the water chestnuts.
If you prefer a spicier filling, add 1/2 teaspoon of red pepper flakes with the sauce ingredients.
Use large, crisp lettuce leaves like iceberg or butter lettuce for the best wrapping experience.
