Make a rich, restaurant-style creamy garlic Parmesan chicken pasta quickly for a satisfying weeknight dinner.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 12 ounces pasta (fettuccine or penne work well)
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  4. Reduce heat to medium. Add butter to the same skillet. Add minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  5. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer. Cook for 3-4 minutes until the sauce slightly thickens.
  6. Stir in the grated Parmesan cheese until the sauce is smooth and velvety.
  7. Return the cooked chicken to the skillet. Add the drained pasta to the sauce. Toss everything together until the pasta is fully coated.
  8. If the sauce is too thick, add reserved pasta water, one splash at a time, until you reach your desired consistency.
  9. Stir in the fresh parsley. Serve immediately with extra Parmesan cheese.

Notes

  • For a slight kick, add 1/2 teaspoon of red pepper flakes when you add the garlic.
  • Use chicken thighs instead of breasts for a richer flavor.
  • If you do not have heavy cream, you can substitute it with evaporated milk, but the sauce will be slightly thinner.
