  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped yellow onion
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon nutmeg
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 (14.1 ounce) package refrigerated pie crusts (2 crusts)
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, salt, and pepper. Cook until chicken is browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion, carrots, and celery to the same skillet. Cook until vegetables are softened, about 5-7 minutes.
  4. Melt butter in the skillet with the vegetables. Whisk in flour and cook for 1 minute, stirring constantly.
  5. Gradually whisk in chicken broth and milk until smooth. Bring to a simmer, stirring occasionally, until the sauce thickens.
  6. Stir in thyme, rosemary, and nutmeg.
  7. Return the cooked chicken to the skillet along with peas and corn. Stir to combine. Cook for 2-3 minutes until heated through.
  8. Unroll one pie crust and place it in the bottom of a 9-inch pie plate.
  9. Pour the chicken and vegetable mixture into the pie crust.
  10. Unroll the second pie crust and place it over the filling. Crimp the edges to seal. Cut several slits in the top crust to allow steam to escape.
  11. Brush the top crust with the beaten egg.
  12. Bake for 30-40 minutes, or until the crust is golden brown and the filling is bubbly.
  13. Let stand for 10 minutes before serving.

Notes

  • For an extra flaky crust, ensure your butter is cold when making your own pie crust.
  • You can substitute any vegetables you like, such as potatoes, green beans, or mushrooms.
  • If you don’t have fresh herbs, you can use dried herbs.
