  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Add chicken pieces to the pot. Season with salt, pepper, thyme, and rosemary. Cook until the chicken is lightly browned on all sides.
  4. Pour in the chicken broth and bring to a simmer. Reduce heat and let it cook for 10-15 minutes, or until the chicken is cooked through.
  5. In a small bowl, whisk together the heavy cream and all-purpose flour until smooth.
  6. Slowly pour the cream mixture into the simmering soup, stirring constantly to prevent lumps.
  7. Continue to cook, stirring, until the soup thickens, about 5 minutes.
  8. Stir in the frozen peas and corn. Cook for another 3-5 minutes, until heated through.
  9. Garnish with fresh chopped parsley before serving.
