One-Pan Lemon Herb Roasted Chicken and Potatoes Bake

Prepare a simple, flavorful chicken and potato bake using one pan for easy cleanup. This recipe is suitable for a hearty family dinner.

  • 4 bone-in, skin-on chicken thighs or breasts
  • 1.5 lbs Yukon Gold potatoes, cut into 1-inch chunks
  • 1 large onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, halved (one half sliced, one half for juice)
  • 4 sprigs fresh rosemary (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the potato chunks and onion wedges. Drizzle with 1 tablespoon of olive oil, half of the Italian seasoning, half of the garlic powder, salt, and pepper. Toss to coat evenly.
  3. Spread the seasoned potatoes and onions onto the prepared baking sheet in a single layer.
  4. In the same bowl, toss the chicken pieces with the remaining 2 tablespoons of olive oil, remaining Italian seasoning, and remaining garlic powder.
  5. Place the seasoned chicken pieces among the potatoes on the baking sheet, ensuring the skin side is facing up.
  6. Squeeze the juice from one lemon half over the chicken and vegetables. Place the lemon slices and rosemary sprigs (if using) on top of or around the chicken.
  7. Bake for 35 to 45 minutes, or until the chicken skin is golden brown and crisp, and the internal temperature of the chicken reaches 165°F (74°C). Potatoes should be tender when pierced with a fork.
  8. Remove from the oven and let rest for 5 minutes before serving directly from the pan.

Notes

  • For crispier potatoes, ensure they are in a single layer and not overcrowded on the pan.
  • You can substitute other hardy vegetables like carrots or Brussels sprouts for the onion.
  • If using chicken breasts, check for doneness closer to the 35-minute mark to prevent drying.
