1 tablespoon olive oil
1 pound pre-cooked chicken sausage, sliced
1 small onion, chopped
2 cloves garlic, minced
1 1/2 cups orzo pasta
4 cups chicken broth
1 head broccoli, cut into small florets
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced chicken sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage and set it aside.
Add the chopped onion to the pot and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the orzo pasta and toast it for 1 minute. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 minutes, stirring occasionally.
Stir in the broccoli florets. Cover the pot again and cook for another 5 to 7 minutes, or until the orzo is tender and most of the liquid is absorbed.
Remove the pot from the heat. Stir in the heavy cream, Parmesan cheese, and the cooked chicken sausage. Mix well until the sauce is creamy.
Season with salt and pepper to your preference. Serve immediately.
Notes
For a lighter version, substitute half-and-half for the heavy cream.
You can use frozen broccoli florets; add them at the same time as fresh ones.
Stir in a squeeze of fresh lemon juice at the end for brightness.
