Prepare a satisfying meal featuring tender chicken in a lemon-garlic butter sauce served over creamy, cheesy garlic parmesan rice, all made easily in one skillet.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • 2 cups cooked white rice (day-old works well)
  • 1 tablespoon butter (for rice)
  • 1/2 cup chicken broth (for rice)
  • 1/4 cup grated Parmesan cheese (for rice)
  • 1 clove garlic, minced (for rice)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  4. Add the 4 minced garlic cloves to the same skillet and cook for 30 seconds until fragrant.
  5. Pour in the white wine or broth and let it simmer for 1 minute, scraping up any browned bits from the bottom of the pan.
  6. Stir in the lemon juice, heavy cream, and 1/4 cup Parmesan cheese. Bring to a gentle simmer.
  7. While the sauce simmers, prepare the rice in a separate small saucepan: melt 1 tablespoon butter, sauté the remaining 1 minced garlic clove for 30 seconds, then add the cooked rice and 1/2 cup chicken broth. Stir until the liquid is absorbed.
  8. Stir the remaining 1/4 cup Parmesan cheese into the rice mixture until creamy. Season the rice with salt and pepper.
  9. Return the cooked chicken to the skillet with the scampi sauce. Stir to coat.
  10. Divide the garlic parmesan rice among serving plates. Spoon the chicken scampi and sauce over the rice.
  11. Garnish with fresh parsley and extra Parmesan cheese before serving.

  • Use low-sodium broth if you are watching your salt intake.
  • For a richer sauce, increase the heavy cream slightly.
  • You can substitute shrimp for chicken if you prefer seafood.
