2 tablespoons olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano
6 cups low-sodium chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
2 cups cooked, shredded chicken breast
1 (4 ounce) can diced green chilies, undrained
1 teaspoon salt
1/2 teaspoon black pepper
1 cup frozen corn
6 corn tortillas, cut into thin strips
1/2 cup shredded Monterey Jack cheese (for topping)
1/4 cup chopped fresh cilantro (for topping)
1/2 avocado, diced (for topping)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until soft, about 5 minutes.
Add the garlic, cumin, chili powder, and oregano. Cook for 1 minute until fragrant.
Pour in the chicken broth and add the diced tomatoes, shredded chicken, green chilies, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes to allow flavors to combine.
Stir in the frozen corn and cook for another 3 minutes until heated through.
While the soup simmers, lightly fry the tortilla strips in a separate skillet with a little oil until crisp, or bake them at 375°F for 8-10 minutes until golden. Set aside for garnish.
Ladle the soup into bowls. Top each serving with crispy tortilla strips, shredded cheese, cilantro, and diced avocado.
Notes
For a creamier soup, stir in 1/2 cup of light cream cheese or heavy cream during the last 5 minutes of simmering.
If you do not have pre-cooked chicken, place 2 boneless, skinless chicken breasts in the broth while simmering until cooked through, then remove, shred, and return to the pot.
Use whole wheat or flour tortillas if preferred, but corn tortillas provide the traditional flavor.
