- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 2 medium zucchinis, halved lengthwise and sliced
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
- 2 tablespoons water
- 1 teaspoon cornstarch (optional, for thickening)
- 1/2 teaspoon sesame oil
- Black pepper to taste
- Mix the soy sauce, water, and cornstarch (if using) in a small bowl. Set aside.
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces to the hot skillet and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken and set it aside.
- Add the minced garlic and grated ginger to the same skillet. Cook for 30 seconds until fragrant.
- Add the sliced zucchini to the skillet. Stir fry for 3 to 4 minutes until the zucchini is tender-crisp.
- Return the cooked chicken to the skillet.
- Pour the prepared sauce mixture over the chicken and vegetables. Stir constantly until the sauce thickens slightly, about 1 minute.
- Remove the skillet from the heat. Stir in the sesame oil and season with black pepper.
- Serve immediately.
Notes
- For a gluten-free meal, use tamari instead of soy sauce.
- If you want to add more vegetables, include 1 cup of sliced mushrooms or bell peppers with the zucchini.
- Serve this stir fry over steamed rice or noodles, or eat it plain for a low-carb option.
