  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot water or hot brewed coffee

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line a 9×13 inch pan.
  2. In a very large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about two minutes until smooth. Scrape down the sides of the bowl as needed.
  4. Carefully pour the hot water or hot coffee into the batter. Mix on low speed until just combined. The batter will be very thin; this is correct.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30 to 35 minutes for layer cakes, or 35 to 40 minutes for a 9×13 pan, or until a wooden pick inserted into the center comes out clean.
