Make simple, moist banana bars loaded with chocolate chips. This recipe uses overripe bananas for maximum flavor.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed very ripe bananas (about 3 medium)
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×13 inch baking pan, or line it with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  6. Fold in the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  9. Let the bars cool completely in the pan on a wire rack before cutting into squares.

Notes

  • For chewy bars, slightly underbake them by a minute or two.
  • If you prefer a fudgier texture, use dark chocolate chunks instead of chips.
  • Store cooled bars in an airtight container at room temperature for up to 4 days.
  • You can add 1/2 cup of chopped walnuts or pecans with the chocolate chips for extra crunch.
