A simple recipe for making moist chocolate chip banana bread using overripe bananas for the best flavor and texture.

Ingredients

  • 3 large very ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, brown sugar, egg, and vanilla extract until combined.
  3. Stir in the baking soda and salt.
  4. Add the flour and mix until just combined. Do not overmix the batter.
  5. Gently fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • Use bananas that are heavily spotted or almost black for the sweetest flavor.
  • For a bakery style top, sprinkle a few extra chocolate chips on top of the batter before baking.
  • If the top browns too quickly, loosely cover the loaf with aluminum foil for the last 15 minutes of baking.
