1 cup mashed very ripe bananas (about 2 large)
1/4 cup melted coconut oil or butter
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
In a large bowl, mix the mashed banana, melted coconut oil or butter, brown sugar, egg, and vanilla extract until smooth.
In a separate medium bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten the tops slightly with the back of a spoon.
Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes).
Use gluten-free oats and a 1:1 gluten-free flour blend to make these gluten free.
For a chewier cookie, slightly reduce the amount of banana mash.
You can add 1/2 cup of chopped walnuts or pecans with the chocolate chips.
