  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Combine the flour, baking powder, salt, and sugar in a large bowl. Whisk these dry ingredients together.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter. A few lumps are fine.
  4. Gently fold in the chocolate chips.
  5. Heat a lightly oiled griddle or large non-stick pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
  8. Serve immediately with your favorite toppings.

Notes

  • For extra fluffiness, let the batter rest for 5 minutes before cooking.
  • Use buttermilk instead of regular milk for a tangier, even fluffier result.
  • Keep cooked pancakes warm on a baking sheet in a 200°F oven while you finish the batch.
