Simple recipe for moist, chewy cookie bars featuring grated zucchini and chocolate chips, baked in a single pan.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups grated zucchini, squeezed dry
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the squeezed, grated zucchini and the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  9. Let the bars cool completely in the pan before cutting into squares.

Notes

  • Squeeze as much liquid as possible from the grated zucchini using a clean kitchen towel or paper towels for the best texture.
  • You can substitute milk chocolate or dark chocolate chips for semi-sweet.
  • For extra flavor, add 1/2 cup chopped walnuts or pecans with the chocolate chips.
