  • 1 cup unsalted butter, melted
  • 1 cup finely chopped hazelnuts
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for dusting)
  • 1/4 cup chocolate spread (like Nutella)
  • 1/4 cup hot water
  • 1 tablespoon honey (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking sheet.
  2. In a small bowl, mix the chopped hazelnuts, granulated sugar, cocoa powder, cinnamon, and salt. This is your filling.
  3. Gently unroll the thawed phyllo dough. Keep the sheets covered with a damp towel to prevent them from drying out.
  4. Lay one sheet of phyllo dough flat. Brush the entire surface lightly with melted butter.
  5. Spread a very thin layer of chocolate spread over the buttered phyllo sheet. You do not need a thick layer.
  6. Sprinkle about one tablespoon of the hazelnut-cocoa mixture evenly over the chocolate spread.
  7. Starting from a long edge, tightly roll the phyllo sheet into a log.
  8. Place the roll seam-side down on the prepared baking sheet. Brush the top generously with more melted butter.
  9. Repeat this process with the remaining phyllo sheets, creating as many rolls as the dough allows.
  10. Bake for 15 to 20 minutes, or until the rolls are golden brown and crisp.
  11. While the baklava bakes, prepare the light syrup by whisking together the hot water, honey, and any remaining melted butter if you have any left over.
  12. Remove the hot baklava rolls from the oven. Immediately drizzle the warm syrup evenly over the hot rolls.
  13. Let the baklava cool completely to allow the syrup to soak in.
  14. Once cooled, dust the rolls lightly with powdered sugar before serving.
