Whip up these delicious chocolate protein muffins, perfect for a healthy breakfast or snack. They’re packed with flavor and protein, using cocoa powder and protein powder for a satisfying treat.

  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate protein powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, sugar, and protein powder.
  3. In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, you can add 1/4 cup of mini chocolate chips to the batter.
  • Adjust the sweetness by reducing the sugar slightly if your protein powder is already sweetened.
