1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 cup granulated sugar
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
1 large egg yolk
3 tablespoons ice water
10 ounces dark chocolate (70% cacao recommended), finely chopped
1 cup heavy cream
1/4 cup granulated sugar
2 tablespoons unsalted butter
1 teaspoon vanilla extract
Flaky sea salt, for sprinkling
Instructions
Prepare the crust: In a food processor, pulse the flour, cocoa powder, 1/4 cup sugar, and 1/2 teaspoon salt.
Add the cold butter cubes. Pulse until the mixture resembles coarse crumbs.
Add the egg yolk and ice water. Pulse just until the dough comes together. Do not overmix.
Form the dough into a disk, wrap it, and chill for at least 30 minutes.
Preheat your oven to 375 degrees F (190 degrees C).
Roll out the chilled dough and carefully fit it into a 9-inch tart pan with a removable bottom. Trim the edges.
Prick the bottom of the crust all over with a fork.
Line the crust with parchment paper and fill with pie weights or dried beans.
Bake for 15 minutes. Remove the weights and paper and bake for another 5-7 minutes until the crust is set. Let it cool slightly.
Prepare the filling: Place the chopped chocolate in a heatproof bowl.
In a small saucepan, heat the heavy cream and 1/4 cup sugar until just simmering. Do not boil.
Pour the hot cream mixture over the chocolate. Let it sit for 5 minutes without stirring.
Gently whisk the mixture until smooth. Whisk in the 2 tablespoons of butter and vanilla extract.
Pour the chocolate ganache into the baked tart shell.
Sprinkle the top evenly with flaky sea salt.
Chill the tart for at least 3 hours, or until the filling is firm.
