  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 1/2 cups grated zucchini, squeezed dry
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cocoa powder.
  3. Add the sugar to the dry ingredients and whisk briefly to combine.
  4. Add the eggs, oil, Greek yogurt, and vanilla extract to the bowl. Mix with a spatula until just combined. Do not overmix.
  5. Fold in the squeezed, grated zucchini and the chocolate chips until evenly distributed.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
