Ingredients
Scale
1 can (8 oz) crescent roll dough
8 oz cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (for filling)
1/4 cup granulated sugar (for topping)
1 teaspoon ground cinnamon (for topping)
1 tablespoon melted butter (optional, for brushing dough)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
Unroll the crescent roll dough and press it evenly into the bottom of the prepared pan, sealing any seams. You can brush lightly with melted butter if desired.
In a medium bowl, beat the softened cream cheese and 1/2 cup sugar until smooth.
Beat in the egg, vanilla extract, and 1/2 teaspoon cinnamon until just combined. Do not overmix.
Spread the cream cheese mixture evenly over the unbaked crescent roll crust.
In a small bowl, mix the 1/4 cup sugar and 1 teaspoon cinnamon for the topping. Sprinkle this mixture evenly over the cheesecake layer.
Bake for 25 to 30 minutes, or until the edges are lightly golden brown and the center is mostly set.
Let the bars cool completely in the pan on a wire rack before slicing. This helps the cheesecake set firmly.
Slice into bars and serve.
Notes
For an extra churro experience, dust the cooled bars lightly with powdered sugar before serving.
If you prefer a thicker crust, use two cans of crescent dough, layering them in the pan.
Ensure your cream cheese is truly soft to avoid a lumpy filling.
This recipe works well in a 9×13 pan for thinner bars; adjust baking time slightly.
