2 cups milk (dairy or non-dairy)
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
Pinch of salt
1 teaspoon vanilla extract

Instructions
Combine the rolled oats, milk, brown sugar, cinnamon, nutmeg, and salt in a saucepan.
Bring the mixture to a simmer over medium heat, stirring frequently.
Reduce heat to low and cook for 5-7 minutes, or until the oatmeal reaches your desired consistency.
Remove from heat and stir in the vanilla extract.
Divide the oatmeal into individual airtight containers if making ahead, or serve immediately.
If making ahead, cool completely before sealing and refrigerating for up to 4 days.
