These cinnamon roll muffins are incredibly moist and fluffy, with a decadent swirl of cinnamon-sugar filling and a luscious, gooey center that tastes just like your favorite cinnamon roll. They’re a perfect treat for breakfast or dessert.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1 tablespoon light corn syrup

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1/2 teaspoon cinnamon.
  3. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, combine the brown sugar, 2 tablespoons cinnamon, and 1/4 cup flour.
  6. Add the softened butter to the brown sugar mixture and mix with a fork or your fingers until crumbly. Stir in the 1/4 cup milk and corn syrup until a thick, paste-like consistency forms.
  7. Spoon about half of the muffin batter into the prepared muffin cups.
  8. Dollop about 1 tablespoon of the cinnamon-sugar filling into the center of each muffin cup, on top of the batter.
  9. Spoon the remaining batter over the filling, ensuring it’s mostly covered.
  10. Bake for 18-22 minutes, or until a toothpick inserted into a muffin comes out clean.
  11. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra gooey center, you can add a small dollop of cream cheese frosting to the center before topping with the remaining batter.
  • If you don’t have corn syrup, you can use maple syrup instead for the filling.
  • These muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
