- 2 tablespoons Coconut Oil (or preferred frying oil)
- 1/4 cup Granulated Sugar
- 1 teaspoon Ground Cinnamon
- Pinch of Salt
- Peel the green plantains.
- Slice the plantains very thinly, aiming for uniform thickness. A mandoline slicer works best.
- Heat the coconut oil in a large skillet over medium heat.
- Carefully add the plantain slices to the hot oil in a single layer. Do not overcrowd the pan.
- Fry the slices for 2-3 minutes per side until they turn light golden brown and crisp.
- Remove the chips from the oil using a slotted spoon and drain them on paper towels.
- In a small bowl, mix the sugar, cinnamon, and salt together thoroughly.
- While the chips are still warm, place them in a large bowl and sprinkle the cinnamon sugar mixture over them.
- Toss gently until all the chips are evenly coated.
- Let the chips cool completely before serving; they will crisp up more as they cool.
Notes
- Use firm, green plantains for the best chip texture. Ripe plantains will be too soft.
- Adjust the cinnamon quantity to your taste preference.
