A simple recipe for moist banana bread featuring a distinct, flavorful cinnamon swirl throughout.

  • 3 large very ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for batter)
  • 1/4 cup brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 1 tablespoon flour (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, granulated sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Prepare the swirl mixture: In a small bowl, combine the brown sugar, 1 tablespoon of cinnamon, and 1 tablespoon of flour. Mix well.
  6. Pour half of the banana bread batter into the prepared loaf pan.
  7. Sprinkle the entire cinnamon swirl mixture evenly over the batter layer.
  8. Gently spoon the remaining banana bread batter over the cinnamon layer.
  9. Use a knife or skewer to gently cut through the batter in an ‘S’ pattern to create the swirl effect. Do not over-swirl.
  10. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • Use bananas that are heavily spotted or black for the best moisture and flavor.
  • For an even distribution of the swirl, you can gently fold the cinnamon mixture into the batter once before pouring half the batter into the pan.
  • If the top browns too quickly, loosely tent the loaf with aluminum foil for the last 15 minutes of baking.
