A straightforward recipe for baking moist, individual-sized pumpkin loaves featuring a distinct ribbon of cinnamon sugar throughout.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • For the Swirl:
  • 1/2 cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour six mini loaf pans (about 5.75 x 3.25 inches each).
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the pumpkin puree, milk, and vanilla extract until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the batter is just combined. Do not overmix.
  7. Prepare the swirl mixture: In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon. Pour in the melted butter and stir until the mixture resembles wet sand.
  8. Fill each prepared mini loaf pan about one-third full with batter.
  9. Sprinkle half of the cinnamon swirl mixture evenly over the batter in the pans.
  10. Top with another layer of batter, filling the pans about two-thirds full.
  11. Sprinkle the remaining cinnamon swirl mixture over the top.
  12. Use a knife or skewer to gently swirl the topping into the batter a few times to create ribbons. Do not over-swirl.
  13. Bake for 30 to 35 minutes, or until a wooden skewer inserted into the center comes out clean.
  14. Let the loaves cool in the pans for 10 minutes before carefully turning them out onto a wire rack to cool completely.

Notes

  • For a less runny swirl, chill the melted butter slightly before mixing it with the brown sugar and cinnamon.
  • To prevent the swirl from sinking, place the first layer of batter down, then sprinkle the swirl mixture, and then top with the remaining batter before swirling gently.
  • Check the loaves at 28 minutes, as mini loaves can bake faster than standard loaves.
