Ingredients
Scale
1 cup Plain Greek Yogurt (full fat for low-carb)
1/4 cup Fresh Orange Segments
1/4 cup Fresh Grapefruit Segments
2 tablespoons Chia Seeds
1 tablespoon Keto-friendly Sweetener (like Erythritol or Monk Fruit)
Zest of 1/2 Lemon
Pinch of Ground Cinnamon
Optional: Small handful of chopped Almonds for crunch
Instructions
In a small bowl, combine the Greek yogurt, keto-friendly sweetener, and lemon zest. Mix well until the sweetener dissolves slightly.
Gently fold in the chia seeds and ground cinnamon into the yogurt mixture.
In a clear glass or jar, begin layering the parfait. Start with half of the yogurt mixture as the first layer.
Carefully place half of the orange and grapefruit segments over the yogurt layer.
Top with the remaining yogurt mixture.
Arrange the remaining citrus segments on top.
If using, sprinkle the chopped almonds over the top layer for texture.
Chill the parfait in the refrigerator for at least 30 minutes before serving to allow the chia seeds to soften.
Serve cold and enjoy your low-carb surprise!
Notes
Tariq suggests using full-fat yogurt to maintain satiety on a low-carb plan.
You can substitute the citrus fruits with berries if you prefer other low-carb options.
Prepare this the night before for a grab-and-go breakfast.
