A classic Southern dessert featuring layers of creamy vanilla custard, sweet ripe bananas, and crisp vanilla wafers.

Ingredients

  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 2 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 1 package vanilla wafers

Instructions

  1. In a saucepan, whisk together milk, sugar, and cornstarch.
  2. Cook over medium heat, stirring constantly, until thickened.
  3. Temper the egg yolks by whisking a small amount of hot milk mixture into them, then stir the tempered yolks back into the saucepan.
  4. Cook for 1-2 more minutes, stirring constantly.
  5. Remove from heat and stir in butter and vanilla extract.
  6. Let the pudding cool slightly.
  7. Layer sliced bananas and vanilla wafers in a serving dish.
  8. Pour the pudding over the layers.
  9. Chill for at least 2 hours before serving.

Notes

  • For a richer flavor, use heavy cream instead of milk.
  • Add a pinch of nutmeg to the pudding mixture for a warm spice note.
  • Top with whipped cream and a sprinkle of crushed wafers before serving.
