4 large shrimp, peeled and deveined
1 tablespoon cornstarch
1 teaspoon all-purpose flour
Pinch of salt
1 tablespoon neutral oil (for frying)
2 tablespoons mayonnaise
1 teaspoon sweet chili sauce
1/2 teaspoon sriracha or to taste
1/4 teaspoon rice vinegar
Instructions
Pat the shrimp completely dry with a paper towel.
In a small bowl, combine the cornstarch, flour, and salt. Toss the shrimp in this mixture until lightly coated.
Heat the oil in a small skillet over medium-high heat.
Place the coated shrimp in the hot oil, ensuring they do not overlap. Cook for 1 to 2 minutes per side until golden brown and cooked through. Remove the shrimp and place them on a paper towel-lined plate to drain excess oil.
While the shrimp cooks, prepare the sauce: In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and rice vinegar until smooth.
Place the cooked shrimp in the bowl with the sauce. Gently toss until all shrimp are evenly coated.
Serve immediately.
Notes
To avoid overcooking, watch the shrimp closely; they cook very fast once they turn pink.
If you prefer an air fryer method, toss the coated shrimp lightly with cooking spray and air fry at 380F for 6-8 minutes, flipping halfway.
Adjust the amount of sriracha to control the heat level of your sauce.
