  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1.5 lbs ground beef
  • 2 tablespoons all-purpose flour

  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf

  • 1 package (2 sheets) refrigerated pie crusts

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add ground beef to the pot. Cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Sprinkle flour over the meat mixture and stir for one minute.
  4. Gradually stir in beef broth and red wine (if using). Add tomato paste, thyme, and bay leaf.
  5. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally, until the sauce has thickened. Remove the bay leaf and season with salt and pepper. Let the filling cool completely.
